Nicaragua
Nicaragua is a nation of rebuilding, where people and cultures constantly reinvent and re-imagine themselves to overcome the hardships and disasters that shaped this country. No one I have ever met says "Hey honey, its vacation time, lets go to Nicaragua!" but the facts are just this: They should. Nicaragua is called "the land of lakes and volcanoes" for its stunning geography, but the people and the food are what I love most, and on the Caribbean side of the country are some of the most beautiful islands you will ever see, and it won't cost you an arm and a leg to see them. Fly into Bluefields and then on to Corn Island and you will be amazed. While I was there I also took in a pro baseball game in Managua between Managua and Grenada. I also attended a night time Ortega rally but I digress ... here are some other fun things to do while you are in Nicaragua.
In Managua, the Laguna Tiscapa canopy tour sends you rocketing over the crater on three cable-connected platforms (tel. 505/888-2566, 9-5:30 Tues.-Sun., $15 for foreigners, $10 for Nicas). The broad panoramas are some of the best in the capital. On the northeast side of Laguna Tiscapa is the site of the old U.S. Embassy, leveled during the earthquake that wiped out Managua 3 decades ago.
Head out to Masaya (about a 30-minute drive from Managua) and check out the Tiangue, a unique food collective outside the ancient Cathedral in the center of the town. About 3 dozen stands line the square, there's live music and the food offerings are all prepared by Nica grandmas who are happy to let you taste their fare which ranges from Mocilla to grilled fish, from roasted chicken to roasted iguana.
Get up and have a quick start in the Mayoreo Market (which is about ten minutes from the airport) where there are idling buses that sell popular street foods in greasy plastic baggies. Grab a bus north on the Pan-American Highway, rising with the landscape and get a local bus, preferably one that goes to Matagalpa. At every stop on the 3 hour trip vendors swarm the bus vending common foods with uncommon twists, like cabbage salad with fried pork skin, chilies and lime. Stop at Don Juan Papaya's for soup or Antojitos, a roadside café that serves grilled chicken, pork, armadillo, beef and boa constrictor.
While in the highlands of Matagalpa, tour Selva Negra coffee plantation and have dinner in the ancient dining room. The homemade German sausages and cheeses are top notch. I stayed in the rooms there as well, and it's beautiful. All the rooms are small stone and wood cabins with fireplaces. In the morning I toured Sol Café where the cupping lab is located to see firsthand the buyers and tasters in action. The cupping is often described as a type of wine-tasting experience.
In Granada, you can head to the Gran Francia Arcangel, a colonial boutique hotel, where its restoration is a metaphor for Nicaraguan reinvention as a whole. This is Nicaragua's most storied hotel and one of the oldest European buildings in the Americas. Sit on the veranda and watch the action go down each night in the town square. Granada is a perfectly preserved colonial Spanish city and one of the most beautiful towns in the Americas. You can also visit Casa San Francisco which has a killer bar and restaurant, right out of a movie set. Los Chocoyos and Café Lucas are pretty cool as well. I ate a nice meal at Casa San Francisco that included:
• Mixed local fruits: nispero, pera de agua, green mango, icacos and star fruit from Masaya.
• Chontales cheese ... aged and soft, but the twist is it is served in the Caribbean style, where they allow the cheese to age in the heat for long enough to produce large juicy cheese worms, which are eaten as a delicacy.
• sapote fruit milkshake
• Roasted wild Iguana, marinated in sour orange, cumin, achiote and other local flavors, and then eaten served whole, surrounded with locally grown vegetables in season. The crispy skin on the outside like a duck a lórange.
In Granada I also think you should check out Volcan Mombacho Cutirre Farm (coffee and canopy tour; best views, hardest to get to). Book through Mombotours in Granada (Calle Atravesada, next to BDF, tel. 505/552-4548, www.mombotours.com). The 15-kilometer ride to the Cutirre Farm takes longer than you'd expect (up to 90 minutes each way). The canopy tour, suspended from 14 of the giant shade trees on the coffee farm, is a professional, safe system of 17 platforms, a hanging bridge, and 13 horizontal zip lines, ending with a 23-meter rappel from a massive ceiba tree.

I'm from Granada-Nicaragua now living in Ohio, i cant wait to get back which i will do so in 8 more days to eat all of the food once again although i give you props for eating Mondongo(pig's stomach),cow tounge, iguana and cheese w/worms i've never tried iguana or those cheesie worms. My country is a hidden jewel waiting to be polished. One more thing, I have only seen you very hesitant about trying food twice. One time was with that foul-smelling fruit that you really hate and the second time was with the Iguana eggs which my wife really enjoys. She made one recommendation: Try them in ceviche! How many times have you actually lost the contents of your stomach from eating bizarre foods? I just had to ask! Love the show!
Nicaragua's food is the best in the region and its people are the warmest and friendliest around. The country also has the richest forests. However, the wildlife is the most devastated in the region and this is due to overhunting. Please do not promote the consumption of wildlife where its consumption is not sustainably managed. In most forests of Nicaragua, it is very difficult to find a living iguana larger than a juvenile. Please leave Nicaragua better than you found it.

Great show. My family enjoys watching it. You have now visited both of my countries...Ecuador and Nicaragua. You brought back wonderful memories of my visits to Nicaragua. The Bus rides and food vendors. Masaya and Granada were great places to visit. My wifes family is from the Northern part...Somoto-Madriz. The town are famous for their rosquillas...they aren't bizarrar so I didn't expect you to try them...but they are awesome.

I am a huge fan, I watch your show every week. I am from Springfield, MA and this morning one of our radio stations (hot 93.1)was talking about your show. If your ever in my part of town come and check out some of our bizarre foods. Soul Food-Barbecue Pigs feet, chitterlings, etc. We even have a local place that prepares alligator (Chef Wayne's Big Mamou).
Andrew, excellent show about Nicaragua! It really came across how much you enjoyed the trip. I saw it with my wife, and since we're both from there, it brought back a lot of great memories. Andrew, I was excited to know that you were filming a show about Nicaragua. I was born there, but left when the guerilla war started. I've not been back since 1978, when I was 12. I watched with my family, and as soon as I saw you get on the plane and head east, I felt you were going to Bluefields, where I was born. I'm planning a trip out to the Corn Islands, and will stop by Bluefields to see how it has changed. Andrew, I enjoyed the episode in Nicaragua. I watch your show every week and like to see the world, thru the bizarre foods you show us. I had a great time watching the episode in Los Angeles as well. I live in Los Angeles for 30 years. Watching the episode last night was very educational for my family (3 daughters) we had great memories of our beautiful Nicaragua. Mr. Zimmern, I cannot express the pride, joy and excitement I experienced watching your show on Nicaragua. I'm a Nicaraguan born-US citizen and moved to the states as a child in 1977. I last revisited Nicaragua in 1980 and 1981, but lots has changed since. As I saw you hop on the bus, a great deal of fun memories of traveling throughout the country came to mind. I so enjoyed watching you eat jocotes and puckering your face. You so very thoroughly and eloquently described all the beauty the country has to offer, its food and the warmth Nicaraguans bring to all who visit with their humble, yet welcoming way. I had emailed and text messaged all my friends and family and got them from all over to watch the show. I have loads of emails I still have to read with questions from the wormy cheese, which I never even heard of, to bulls testicles, which I do recall having. I was always wishing you or Mr. Bourdain would visit Nicaragua. And BINGO, you beat him to it! I can't thank you enough for putting Nicaragua out there on the map again in a very positive and alluring manner. You have made me reconsider visiting with my children, with whom I enjoy watching you with. It's one thing when we tell children about the our experiences, but it's totally different when they hear somebody else, especially you, talk about the similar experience I had and how much you've enjoyed your visit. We went on-line and when they heard you say that you'd visit with your family, that did it! I work in the cruising industry and we're always cruising. But guess what? No more cruising for them for a while, they want to save their vacation time and finally travel to their mother's birth place, Nicaragua. Thank You. Kuddos! Bingo! Fantastic! Fabulous! Hi Andrew, I want to thank you a million times for going to Nicaragua. I was born in Leon and left the civil war when I was 5 in 1979. Next time, have Leon on your list. It's a must see city. It's the city where artist, poets and so much history lies in Nicaragua. Great food and has one of the oldest cathedral in Nicaragua. My father is from Bluefields and he was so happy you went. Yummy Rondon! Corn Island is an island paradise and a must see. Again Thank you for visiting Nicaragua. I plan to go next year.

Thanks for visiting my homeland. I hope you've liked it. Unfortunately it's quite devastated by so many reasons (political and weather wise), But no matter what I'm still very proud of my country and I can't wait to go back again. Some of the things you actually presented are the ones I miss the most. I think that I know why you decided to show a typical the bus ride in Nicaragua and that is because in a Nicaraguan bus you get to meet the most genuine people in planet and even with negative aspects nicaraguans always turn it into a hillirious situation. Nicaraguan are always looking for the bright side of life. By the way I'm from Esteli and like your friend said during the show " INDIO COMIDO PUESTO AL CAMINO" and I gotta go. Andrew I love the show and I am a big fan. I have been living in Nicaragua for 6 years and have experience some of the most bizarre food this country offers. I feel like you missed out an a few Nica specialties. First and foremost you didn't each conchas negras virgenes. There is no better tasting raw bar delite in the world as the black clams from the northern pacific coast of Nicaragua. Squeeze the lime and watch them squirm! Secondly you missed the pelibuey. A pelibuey is a sheep/goat mix that is common here and tastes great when prepared correctly and grilled. There are a ton of bizarre drinks here that you didn't get into. Pinolillo - a cracked corn drink. Tamarinda con Chia - a drink that looks like your are drinking a glass of tadpoles. just to name a few. Anytime you want to come back to Nicaragua with the family. give me a shout and i will show you some more bizarre foods.

I'm proud you visited my country.. a country that has so much to offer.. but as I read I realiza you didn't visit the city León, which is another beautiful colonial style city, it has the biggest cathedral in America and is full with beautiful Churches, next time you visit the country make sure you visit that city, also I recommend you to visit the Ometepe Island and San Juan River, both paradise on earth, there are LOTS of places to visit, so you should come back.. thank you for comming

I was born and raised in Nicaragua, now i am studying abroad, but my mother and all her family are from the Caribbean Coast, Bluefields and Pearl Lagoon, thanks again to choosing Caribbean food. I do love your comments at your blog. I have seen the show the one where you visited Spain, since them i have been hook up.
I don´t consider the food in my country or any other country is bizzare is just "exotic" and the taste resume the culture of each country.
I am glad you encourage the people who don´t know my country to visit it. Come back again anytime still there is a lot to see and taste. Always you will be welcome in the special way that only Nicaraguan can offer.

Hi Andrew, I love your shows, this one in Nicaragua was of particular interest as our son in there on a mission. He is in Masaya and loves it. Your show was a sneek peek into the world that my son enjoys each day. He is vegan, so he misses out on all those meats you tasted, but he is in heaven with the wide variety of fruits there are. Andrew, thank you so much for going to Nicaragua and I'm so glad you liked it. I'm a little disappointed you didn't go to a restaurant called "La Cocina de Dna. Haydee" in Managua, it's the best in typical Nicaraguan cuisine. But, I guess the food served there is not bizarre enough. Nonetheless, I'm very greatful.
Let me tell you that I love your show and i always watched, and you have no idea how incredibly happy you have made me by going to my native Nicaragua. I always made sure to share the my culture with everyone I met and I always dreamed of programs like yours to come to Nicaragua, as it is a beautiful country. I was really happy to see you in Nicaragua. Thank you so much for all the kind words you used to discribe NIcaraguans and the way they live. I have thoughout traveled Nicaragua since 2003. It is a very beautiful place. When I see other shows depicting exotic Southesat Asia, I think of Nicaragua and how you can go from surfing a volcano to a beautiful Pacific coast beach. The food is excellent and people are very welcoming. May be you can go back to do a second show , there are still many places to discover
Andrew, I am in awe of you and your travels. The food and people you eat are not only fasinating and bizarre to say the least but it is intriguing to see. I have never been able to travel anywhere and my husband and I love to eat different kinds of food and are very adventurous. However I am not sure we are as adventurous as you. Since we have been watching though, there are lots of places that we would like to see one day and would have never thought of going there until your show.
